Coriander seeds have a distinct aroma because of the essential volatile oils it contains. The pinene and terpenes linalool gives a lemony citrus flavor to the seeds when crushed. Coriander seeds are brown in color and are plump with a hollow cavity. These seeds are a prominent ingredient in the Indian garam masala and many of the Indian curries.
