Matta Rice
Matta rice also known as Kerala red rice or Kerala parboiled rice, is a unique variety of rice cultivated primarily in the southern Indian state of Kerala. Renowned for its distinctive red color and nutty flavor, it holds a special place in South Indian cuisine and is celebrated for its numerous health benefits.
The vibrant red hue of this rice is attributed to its unpolished nature, which retains the outer bran layer rich in antioxidants and essential nutrients. Unlike white rice varieties that undergo extensive processing, it is parboiled, a method that involves partially boiling the rice in the husk before milling. This process not only enhances its nutritional profile but also results in a firmer texture and a characteristic reddish tint.
Nutritionally, it is a powerhouse of vitamins, minerals, and dietary fiber. It is particularly rich in B vitamins, including thiamine, niacin, and riboflavin, which play crucial roles in energy metabolism and overall health. Additionally, it contains significant amounts of iron, calcium, and magnesium, essential minerals vital for maintaining bone health and supporting various bodily functions.
It is grown in abundance in the Palakkad district of Kerala and is popular for its health benefits and coarseness.
